Safeway Recipe.. Amby Raes Cucumber Salad

This is one of my favorite summer salad recipes. When I go to Safeway I always buy this in the summer it’s perfect for picnics. I also enjoy this as a salad for Thanksgiving.

Ingredients:  2 Large cucumbers peeled and cubed, 2 cups sour cream, 4 sprigs of fresh mint chopped, 3 cloves of garlic peeled and minced, 1/4 cup lemon juice, 1/4 cup olive oil, 1/4 tsp salt, and 1/8 tsp pepper.

Directions: Place cucumber in bowl set aside. In small bowl whisk together everything else and pour over cucumber and gently stir. There is your cucumber salad enjoy.

    That sounds yummy and add a little bit of feta cheese for that Greek salad touch.

    Salads are always good for health.
